Cupcakes and...Beer??

Happy Monday Everyone! 

I hope everyone had a great weekend :) It was my mom's birthday so I was a cooking and baking machine! 

I stumbled across this Chocolate Stout Cupcake recipe and was immediately intrigued! I know alcohol can definitely be used in chicken and other meats, but in a cupcake?! Who knew! 

My mom told me of a really good stout from Trader Joe's called Boatswain Chocolate Stout and it was absolutely perfect! So if you are making these cupcakes, PLEASE buy this stout! 

BTW, you definitely do not need to add stout to the cupcakes, but I thought it added a little kick! 
 

From Left To right:
Unsalted Butter, Baking Soda, Salt, Vanilla Extract, Cocoa, Cream Cheese, Flour,
Sour Cream, Sugar, Heavy Cream, Confectioners Sugar

It took everything in me to not taste this batter! It smelled Uh-Mazing! 

Into the oven they go! 

In order to ice the cupcakes as neatly as possible, 
I put the icing in a ziplock back and cut a small hole in the bottom corner. 

Ta-da!! 

This cupcake was inhaled RIGHT after this picture was taken lol

Yummy Stuffed Bell Peppers

I made this for dinner last night and it was a hit! It's a super simple recipe and you can definitely change up what you decide to stuff in your peppers.

I usually stuff it with ground turkey and quinoa, but this time around a replaced the quinoa with white rice. I'm sure it would be great with ground beef or chicken along with any other grain.

Ingredients: mozzarella cheese, onion, bell peppers, tomatoes, tomato paste, ground turkey, white rice

Seasonings: sea salt, red chili pepper, black pepper, garlic powder, 21 seasoning saulte

My favorite seasonings...for basically EVERYTHING!

Steps

After cooking your ground meat along with your chopped onion and tomato, add about two cups of cooked rice to the meat mixture. Then add the tomato paste, and about 1/2 cup of cheese and mix thoroughly.

For the bell peppers, I like to parboil them for about 4-5 minutes to get them soft before stuffing them.

Once done, I simply stuff my meat, rice, and cheese mixture into the pepper and top it off with more cheese :) 

Pop them into the oven to bake for about 20 minutes and they are good to go!

Polka Pastels

I have a thing for nail polishes...okay an obsession with nail polishes. Figuring out what color to polish my nails with can be challenging so I usually just end up using multiple colors! Problem solved :)

I'm loving pastels right now, especially on nails so when I saw this look on tumblr I knew I had to replicate it!



Here are the colors that I chose
From Left to Right:
 China Glaze-For Audrey| OPI-Do You Lilac It| Sally Hansen- Mint Sorbet| 
OPI-Japanese Rose Garden| Wet n Wild- Club Havana

To start of, I made sure that my nails were nicely cleaned and filed. 

I then applied OPI Start to Finish Base and Top Coat. 
Isn't that such a cool idea to have both base and top coat in one bottle?

Then I applied two bases of each color on my nails. I like to take the brush, add a drop of nail polish to the middle of my nail and work my way out to the outer parts of the nail.

After letting it dry, I took a toothpick and dipped it in my white nail polish and carefully made little polka dots across my nail! I'm sure you can just use a nail pen for that for an easier application :)

Sunday Funday

This is the look I wore to church today. I am in looovvee with these heels! They are surprisingly comfortable which is something I can't say for majority of the heels in my closet. I know..it's a shame :(

 I'm also loving pencil skirts at the moment. Especially ones in cute colors and prints which makes them more youthful!
